Alpine Hericium erinaceus

Alpine Hericium erinaceus, also known as fog Hericium erinaceus, is mostly wild in summer and autumn on dead or fallen trees in spruce, fir and arrow bamboo forest belts above 3,000 meters above sea level.

     Hericium erinaceus

Hericium erinaceus, also known as Hericium erinaceus, is called monkey head in Japan. Most of them grow on live trees in the broad-leaved forest of the genus Quercus, and a few grow on decayed dead or fallen trees. In some cases, they grow in pairs on oak trunks or branches. When mature, it is mostly dark brown, edible, and tastes very good.

     Coral Hericium erinaceus

Coral-shaped Hericium erinaceus is also known as Yu-beard mushroom, red Hericium erinaceus, and wool fungus. The main feature of the coral-like Hericium erinaceus is that the fruiting body grows several main branches from the base. On each main branch, there are short and thin small branches, and on the small branches, there are clusters of dense short thorns. Coral, hence the name Coral-shaped Hericium erinaceus.

Lion's mane (Hericium erinaceus) is a type of medicinal mushroom. Long used in traditional Chinese medicine, lion's mane is widely available in supplement form. Scientific research shows that lion's mane contains a number of health-promoting substances, including antioxidants and beta-glucan.

Because of the mushrooms unique flavor, it is best to cook as uncomplicated as possible.  The lion’s mane mushrooms thick texture means that they are great for sauteing, deep frying, in stews, sauces and for roasting.
