Hericium erinaceus is a mesophilic fruiting fungus. Mycelium growth temperature range is 6-34 ℃, and the optimum growth temperature is about 25 ℃. When the temperature is lower than 6℃, the metabolism of the mycelium stops; when the temperature is higher than 30℃, the mycelium grows slowly and is easy to age, and stops growing at 35℃. The formation temperature of fruiting body is 14-25 ℃, the mycelium is easy to twist into mushroom buds at 20-22 ℃, the number of primordium differentiation decreases at 25 ℃, the formation of primordium is inhibited above 25 ℃, and the primordium cannot be formed at 30 ℃; The fruit body is difficult to form below 14°C; the optimum temperature for the growth of the fruit body is 16-20°C; below 14°C, the heart fruit body turns red, with the decrease of temperature, the color deepens, and has no edible value. The effect of temperature on the shape of the fruiting body is also obvious. When the temperature reaches above 18 °C, the number of fruiting bodies increases, the growth is fast, the spines are slender, the individual is small, loose, and yellowing occurs; when the temperature reaches 16 °C, the fruiting body appears. Strong, snow-white, with thick and long spines.

Lion's mane (Hericium erinaceus) is a type of medicinal mushroom. Long used in traditional Chinese medicine, lion's mane is widely available in supplement form. Scientific research shows that lion's mane contains a number of health-promoting substances, including antioxidants and beta-glucan.

Because of the mushrooms unique flavor, it is best to cook as uncomplicated as possible.  The lion’s mane mushrooms thick texture means that they are great for sauteing, deep frying, in stews, sauces and for roasting.
